We are thrilled to have bread expert, Melina Kelson, join us for a highly informative virtual lecture and demonstration demystifying the art of sourdough starters and sourdough bread. Melina will walk you through every step of sourdough fundamentals including sourdough maintenance, understanding the autolyse method, mixing, shaping, scoring and how to modify home ovens to get professional results. She will also cover key concepts such as simplified baker’s math, steps in yeast dough production, understanding and manipulating fermentation, mixing techniques for the best outcomes and essential tools. After class, you will have the knowledge needed to confidently start your own sourdough adventures at home!
Melina Kelson is a Certified Master Baker, Certified Bread Baker, Certified Viennoiserie Baker, Certified Executive Pastry Chef, and a Certified Hospitality Educator. She taught Culinary Arts for 18 years and created the Artisan Bread and Viennoiserie programs at Kendall College in Chicago. She also served on the Board of Directors of the Bread Bakers Guild of America for a dozen years. She currently operates Bootleg Bâtard, a wood-fired microbakery in Skokie, IL.
