Hands-On The Great Pumpkin

The Great Pumpkin isn't just a figment of Linus' imagination. Let's celebrate an exciting variety of sweet, savory and delicious fall-friendly squash in this hands-on class. 

Menu:

• Butternut Squash Bisque with Shaved Brussels Sprouts, Toasted Pecans and Pecorino 
• Roasted Delicata Squash Salad with Farro, Baby Kale and Maple-Cider Vinaigrette 
• Spaghetti Squash "Pasta" with Italian Sausage, Sautéed Fennel and Mozzarella Cheese 

Skills covered in class: 

• Selecting and working with various winter squash 
• Sautéing and roasting squash 
• Making pureed soup 
• Balancing flavors 
• Working with fresh herbs, spices and grains 
• Making vinaigrette 
• Selecting sausage 
• Making ragù 

Varieties of squash are subject to change depending on availability.

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
