Join us for a hands-on class this Valentine’s Day weekend while our chef teaches you how to prepare an elegant meal fit for a special occasion.

Menu:

  • Oysters Rockefeller Crostini with Spinach, Bacon and Parmesan  
  • Sautéed Filet Mignon with Crawfish-Cajun Spiced Compound Butter
  • Dirty Rice with Andouille Sausage 
  • Green Beans Almondine (Roasted Green Beans with Almonds and Lemon)
  • Dark Chocolate-Banana Bread Pudding with Bourbon Whipped Cream

Skills covered in class:

  • Getting familiar with Cajun and Creole ingredients 
  • Making bechamel
  • Selecting shellfish 
  • Making compound butter
  • Working with fresh herbs and spices
  • Selecting and sautéing beef 
  • Steaming rice
  • Roasting green vegetables
  • Making and baking custard 

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
