Hands-On Seafood on the Grill

Don't have the confidence to grill fish? Our Chefs will help you conquer your fears with important techniques and delicious recipes to set you up for a successful grilling season in this hands-on class. Grilling classes take place outdoors on our patio. In case of inclement weather, class will be moved indoors and taught as a hands-on cooking class with an emphasis on using indoor grill pans.  

Menu:

  • Whole Grilled Oysters with Garlic Butter and Grilled Corn and Zucchini Succotash   
  • Crab Stuffed Grilled Calamari with Grilled Fennel Salad and Lemon Aioli 
  • Teriyaki-Glazed Cedar Planked Salmon with Grilled Pineapple and Broccoli Slaw

  • How to set up your grill
  • Selecting fish and shellfish
  • Determining fish and shellfish doneness
  • Making compound butters
  • Working with fresh herbs and spices  
  • Making fillings
  • Grilling vegetables
  • Balancing flavors
  • Making cold emulsions
  • Working with cedar planks

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
